Microsoft Word has a feature called "fast saves"
If you have the option "allow fast saves" checked, then Word writes the original file and deltas until the file reaches a certain size. In this case, undo information is saved.

If you uncheck the option "allow fast saves," so that fast saves are not allowed, then undo information is not saved.

Given the research I've done into metadata in Word
documents, I'd greatly appreciate any information you
could provide regarding how "undo" information is
retained after a Word document is saved, closed, and
reopened.
